ℹ️ We are feeling at home in Central Portugal. Things are starting to fit together as we are getting to know the area around us better and how things work around here. We head off to Santa Comba Dao to get some swimming arm bands for toddler Story and then take out the trash in the old Portuguese village while Sach makes some delicious lemon & poppy seed vegan muffins, recipe below for you to try 🙂
MUFFIN RECIPE:
150g non dairy milk
250g oat flour
pinch of salt
1 tsp baking powder
40g coconut sugar (add more if you prefer a sweeter muffin)
3tbls poppy seeds
juice & zest from 1 large lemon
if the mix is looking a bot too dry, Add in some applesauce ( i added 1/4 cup) and a couple of tbls of non dairy milk.
I added 4 tbls oat milk.
Cook muffins for 30 mins at 350 degrees.
Makes 6-8 muffins.
