Gluten Free Vegan Pancakes Have Never Been So Easy!
With Shrove Tuesday AKA Pancake Day, fast approaching worldwide, here are 3 super easy vegan pancake recipes to serve to your friends and family. They are completely Dairy Free, Gluten Free & Delicious!
These vegan pancakes really are so easy and they are great for getting your toddlers & kids involved in the making. It’s a super simple batter mix, my 2 year old daughter had so much fun putting these pancake stacks together and decorating them with the toppings! (Including covering her own face & hands in melted dark chocolate!)
VEGAN PANCAKES 3 WAYS – RECIPE
Pancake Batter Mix VG & GF
1. Original Pancake Batter
1 Ripe Banana
100g (1 cup) Rolled Oats (use special Gluten Free oats if you have an intolerance to gluten, but generally all oats are gluten free)
100 ml Water *
* use more water if you want thinner style pancakes, add in around 125-150mls to have a runnier batter.
2. Chocolate Pancake Batter
Same mix as above but for chocolate vegan pancakes add in:
1-2 tsp Cacao Powder
3. Coconut Pancake Batter
Same as the original pancake batter recipe, but instead of water add in:
100mls Coconut Milk Drink (125mls for a slightly thinner pancake)
Pancake Toppings
Pancakes are of course all about the delicious toppings & making them look amazing!
They are so versatile and you can get really creative topping these vegan pancake stacks.
For our pancakes I used a combination of:
Homemade Peanut Butter
Bananas
Homemade Raspberry Coulis*
Fresh Raspberries
Chia Seeds
Desiccated Coconut
Melted Dark Chocolate
* for a super easy raspberry coulis cook 1 large pear in water until soft. Remove the pear pieces from the water & blend in a blender with a handful of raspberries.
