Whether you are vegan or not, you will more than likely encounter one of these ‘picky’ plant based beings at some point. Maybe a family member has ditched the dairy or your best friend is now moving on from the meat scene.

Being Vegan is no longer reserved for the hippy cousin returning from the mountains of Nepal complete with long hair & unwashed armpits, with grandma fretting over what to feed them at the family gathering.

No, we vegans now come in all forms & we can sneak up on you at any time. The new girlfriend/boyfriend that you met at the trendy bar, your lovely health conscious auntie. Even your brothers or sisters may decide to make the switch & you will probably wonder, what do they live on? Or if they will eat bacon or not? Well, they live on food & no they won’t.

Feast your eyes upon these 5 vegan meals to impress your vegan friends. Whipping up one of these next time you see your vegan mate will be a sure fire way to head up the friend ranks instead of just producing a bag of salad leaves or maybe even, nothing at all.

1. VEGAN SAUSAGE ROLL

Move over Greggs! There’s a better Vegan Sausage roll in town 😉

First up we have a Vegan Sausage Roll. Yes, you read that correctly.
Being vegan doesn’t automatically make you a health conscious salad eating guru, even the most experienced vegan will be weak at the knees at the thought of delicious things wrapped in flaky pastry.
So here we have….. drum roll please….. The Vegan Sausage Roll.
Instead of a mashed up pig, our sausage comes in the form of sweet potato & chickpeas.
Making a homemade sausage roll allows you to control the amount of filing inside & become the master of your own portions. Meaning gone are the days when taking a bite out of a shop bought sausage roll meant only getting a disappointing mouthful of dry pastry.
There is nothing better than a well endowed sausage roll & this is exactly what we have created. Its chunky, herby & delicious.
There is no way your vegan friends won’t be impressed by this, not only do they taste better than a regular sausage roll, but your friends will also appreciate the effort you went to to ‘vegan-ise’ a well known favorite.

Vegan Sausage Roll Recipe

1 Can Chickpeas, drained & rinsed
2 Medium Sweet Potatoes, peeled & cut into small cubes
1 tbls Tomato Puree
1 tbls Rosemary (Fresh or Dried)
1 tbls Thyme (dried)
1 tbls Basil (dried)
1/2 tsp Sea Salt
3 Garlic Cloves, Minced (or 1 tsp garlic powder)
1 Flax Egg (1 tbls ground flax seeds mixed with 2.5 tbls water)
1 Sheet Vegan Ready to Roll Puff Pastry
1 tsp Poppy Seeds
1 tsp Sesame Seeds

Put the Sweet Potatoes on a baking tray & drizzle with oil, salt & pepper. Cook for around 20 mins, until they are soften.
Once cooked, place in a large bowl with the chickpeas, flax egg, garlic, tomato puree & all the herbs.
Mash all the ingredients together with the back of a fork or alternatively pulse in a blender.
Roll out your pastry sheet & cut in half so you have 2 rectangles.
Divide the sausage mixture in half & place down the center of each pastry rectangle.
Roll the pastry over the top of the mixture & join it to the edge to make a seam.
Make sure the seam of the sausage roll is now on the bottom.
Brush some non dairy milk over the top of each sausage roll & sprinkle with the poppy & sesame seeds.
Make a couple of cut in the top of the pastry for air holes.
Place the sausage rolls on a baking tray & cook at around 200 Degrees for 25 minutes, or until golden brown & crispy.
Serve the vegan sausage rolls straight away or eat them cold.

2. WARM POTATO, LEMON & BEAN SALAD

Ok, Ok, we snuck a salad in here, BUT it’s far from a limp lettucey mess. This is a salad that will impress & delight your vegan family & friends.
Full of hearty filling beans & warm potatoes, with the lemons adding a fresh and zesty tang, the vegans in your life will be well & truly satisfied with this take on a salad.
Perfect as a light summery meal on its own or how about pairing it as a side dish with that vegan sausage roll. It will be talked about long after the last bite. Guaranteed.

Warm Potato, Lemon & Bean Salad Recipe

400g Baby Potatoes,
Couple large handfuls Fresh Spinach
Couple large handfuls Fresh Rocket
Couple handfuls Fresh Coriander
1 Can Butter Beans (or any bean of your choice – chickpeas also work well)
4-5 Tomatoes, Diced
Juice & Zest of 1 Lemon
Sunflower Seeds
Olive Oil
Salt & Pepper

Cook Potatoes until soft. When cooked, drain them & put into a bowl with the beans, lemon, salt & pepper with a drizzle of olive oil. Mix together well.
In a separate bowl combine the salad leaves & tomatoes, season well.
Pour the potato mix on top of the salad leaves & drizzle some olive oil over the top of everything. Sprinkle with sunflower seeds before serving.

3. VEGAN GREEN SMOOTHIE

Most Vegans will appreciate a well made Green Juice or Smoothie. We have had many on our vegan journey, some better than others, yet this particular recipe is a great ‘starter’ green juice.
It is packed full of spinach & bananas, making it a healthy yet filling drink. Great for a snack or a loving (& easy) gesture to show your vegan friends you are able to provide a nourishing beverage for them.
Impress your vegan friends with this glass of greens & impress yourself at how easy & tasty it really is.
Spinach is a rather mild green & doesn’t overpower the smoothie, when mixed with the sweetness of the bananas it makes for a perfect pairing. The sunflower seeds are there just to add in some healthy fats & vitamin E, you don’t notice them when it’s blended up & it never hurts to throw in some extra vitamins & minerals whenever you can.

4. THREE BEAN VEGAN CHILLI

Now, this three bean chilli recipe will hands down impress your vegan friends. It has been tried & tested many times & on many different people. It is one of the first dishes we began to cook when we became vegan & also one of the easiest to adapt, with all the saucy spiciness involved, you really don’t notice that the mince meat is missing.
It tastes just like a ‘Real’ Chilli Con Carne thanks to the spice mix & has the added benefit of being a way to pack in some veggies with the carrots.
It is filling, hearty & spicy. Serve on a bed of nutty brown rice & you & your vegan friends will be left stomach rubbingly full.
